Ingredients: 3 eggs; 60g Sugar; 1 teaspoon vanilla mixed with 1 tablespoon sugar; 70g pastry flour; 1/2 tsp baking powder; 1kg apples (about 7-8 medium); juice of 1 lemon; 1 1/4 cups (300ml) water; 150g sugar; 1/2 tsp Cinammon; 1 pack vanilla pudding; 400g (1.75 cups) heavy cream; 2-3 teaspoons cream stiffener (see notes); 50g dark chocolate shavings
